Apple, Carrot, and Three Seed Muesli Bars

Imagine cooking perfectly crunchy, golden and chewy muesli bars in your Microwave. We’ve adapted the recipe to reduce the sugar and added some nutritious seeds and naturally sweet carrot too. The perfect snack you can include in lunchboxes or freeze and enjoy on the go.

Ingredients

  • 100 g unsalted butter
  • 80 g ½ cup firmly packed brown sugar
  • 4 tablespoons golden syrup
  • 250 g 2 ½ cups rolled oats
  • 1 tablespoon sesame seeds
  • 1 tablespoon sunflower seeds
  • 1 tablespoon pepitas
  • 1 apple peeled and grated (juice squeezed out)
  • 1 small carrot grated (juice squeezed out)

Instructions

  • Preheat the oven on convection 180℃
  • Place the butter, sugar and syrup into a microwave safe bowl and melt on medium microwave for 2-3 minutes
  • Mix in the oats, seeds, apple and carrot, making sure it is thoroughly mixed
  • Press the mixture in a 20cm square baking tin, lightly greased
  • Bake on convection 180℃ for 20-25 minutes or until golden brown and firm to touch
  • Cut into 10 bars whilst still warm and store in the fridge
  • Serving suggestion : Serve a muesli bar as a snack alongside some Greek or Natural Yoghurt and sliced strawberries
  • Storage : Keep muesli bars in an airtight container in the fridge for up to 5 days. Alternatively, freeze in individual portions for up to 3 months.
