Lemon Mug Cake

Introduce your kids to the joy of cooking with this simple Lemon Mug Cake recipe! It uses simply pantry ingredients can be cooked in a Panasonic Microwave Oven in 2.5 minutes!

Ingredients

  • 3 tbsp Wheat flour
  • 3 tbsp Sugar
  • 1 1/4 tbsp Baking powder
  • 1/8 tsp Salt
  • 2 tbsp Vegetable oil
  • 2 tbsp Lemon juice
  • 1/2 Lemon zest
  • 1 Egg

Topping

  • Whipped cream as desired
  • Blueberry as desired
  • Strawberry as desired
  • Mint as desired

Instructions

  • Mix flour, sugar, baking powder and salt together in mug. (size of mug should be at least 300ml)
  • Add vegetable oil, lemon juice, lemon zest and beaten egg.
  • Set microwave at full power and cook for 1 minute (based on 800W microwave).
  • Let it rest for 20 seconds, then cook at full power for a further 1 minute and 30 seconds.
  • After cooking allow to stand for a few minutes and serve warm in the mug with ice-cream, custard, cream, strawberries or sprinkles etc.
