Homemade Breaded Fish Fillets and Sweet Potato Fries

Ingredients

For the Fish Fillets

  • 1 Egg beaten
  • 85 g Panko breadcrumb
  • Zest and juice 1 lemon
  • Black pepper
  • 1 tbsp Olive oil
  • 400 g Skinless white fish fillets such as cod or hake

For the Sweet Potato Fries

  • 500 g Sweet potatoes peeled and cut into medium thick fries
  • 25 g Butter or oil
  • 1 Clove garlic
  • Sea salt to season

Instructions

For the Fish Fillets

  • Heat oven on CONVECTION 180C.
  • Pour the beaten egg into a shallow dish.
  • Tip the breadcrumbs onto a plate. Mix the lemon zest into the breadcrumbs along with some salt and black pepper.
  • Brush a non-stick baking sheet with half of the oil.
  • Dip the fish fillets into the egg, then into the breadcrumbs. Transfer to the baking tray.

For the Sweet Potato Fries

  • Place the butter and garlic in a large bowl and melt on MEDIUM MICROWAVE for 1 minute.
  • Toss the potato fries in the garlic butter and place on the baking tray. Sprinkle with salt.
  • Place baking tray on the wire shelf and cook using the Auto Weight Program in your combi. When using the CT5S and CD8, use the Auto Fish and Chip Menu on the display.
