Pork & Prawn Wontons in Chilli Oil

Ingredients

Pork and Prawn Wontons

  • 250 g pork mince
  • 150 g prawn deveined and roughly chopped
  • 1 spring onion sliced
  • 1/8 tsp white pepper
  • ¼ tsp sea salt
  • ½ tsp white sugar
  • 30 wonton wrappers
  • 1 tbs vegetable oil

Chilli Oil Sauce

  • 80 g chilli oil with sediment
  • 80 ml sweet soy
  • 3 tbsp black vinegar
  • 1 garlic clove minced
  • 1 spring onion sliced
  • 1 tbs white sesame seeds toasted

To Serve

  • Coriander leaves

Instructions

  • Evenly brush the vegetable oil on the Metal Tray and set aside.
  • To make the wonton filling, place pork, prawns, spring onion, white pepper, sea salt and sugar into a bowl and using your hands mix vigorously until smooth and sticky.
  • Hold a wonton wrapped in the palm of your hand so that one corner is facing you. Place 1 teaspoon of the filling into the middle of the wonton wrapper. Using your finger, wet the top two edges of the wrapper and then fold the bottom half of the wrapper up onto the wet edges. Press firmly to secure and push out as much air as possible. Place onto oiled Metal Tray and continue with the remaining wonton mixture and wrappers, leaving a gap between each dumpling.
  • Fill the water tank and place the Metal Tray into the middle shelf position.
  • Cook using Steam 1 for 10 minutes.
  • Whilst the dumplings are cooking, make the chilli oil sauce. Combine all the ingredients into a bowl and set aside.
  • When the dumplings are ready, carefully transfer them into the bowl with chilli oil sauce and gently toss to coat the dumplings.
