Boston Bun

Check out this delightful Boston Bun recipe created in a Panasonic SD-R2530 Automatic Bread Maker. Known for its thick layer of vanilla and coconut icing, this afternoon delight pairs perfectly with a hot cup of tea or coffee.

Ingredients

Bun

  • 2 tsp 8g instant yeast (8g)
  • 2 1/2 cups plain all-purpose flour (375g)
  • 1/4 cup golden caster sugar (55g)
  • 1/2 tsp fine salt
  • 80 g unsalted butter melted and slightly cooled
  • 1 large egg beaten
  • 2/3 cup milk (160ml)
  • 1 tsp vanilla extract (5ml)
  • 50 g raisins
  • 50 g sultanas

Icing

  • 60 g unsalted butter at room temperature
  • 2 cups icing sugar (300g)
  • 1 tsp vanilla extract (5ml)
  • 1 1/2 Tbsp milk
  • Shredded coconut to sprinkle on top

Instructions

Bun

  • Remove the bread pan from the machine and attach the kneading blade.
  • Place the dry ingredients in the bread pan in the order listed above starting with the yeast and ending with the salt. Ensure the yeast does not touch the blade.
  • Pour in the liquid ingredients starting with the melted butter and ending with the vanilla. Pour the liquids in the edge of the pan to avoid splashing.
  • Place bread pan back into the machine and close the lid.
  • Add the raisins and sultanas in the automatic fruit & nut dispenser.
  • Set the machine to basic raisin bread and press start.
  • When the dough cycle is complete, carefully remove bread pan from the machine and allow the bread to pop out by gently shaking the pan onto a wire rack.
  • Allow bun to cool completely.

Icing

  • In a large mixing bowl, beat butter for a few seconds until creamy.
  • Sift over half of the icing sugar and beat until creamy.
  • Sift over remaining icing sugar, pour in vanilla and milk. Beat for 2 minutes until smooth and fluffy.
  • Spread icing over cooled bun and sprinkle with shredded coconut. Allow the icing to set.
  • Slice, serve and enjoy.
