1cupraw cashewssoaked for 15 minutes in boiling water
1/4cuparrowroot powder or corn flour
2cupssoy milk
Juice of 1 lemon
1/2cupcoconut sugar
4TBSPagar powder
1tspvanilla extract
pinchsalt
1/2cupwater
4 -6tspcoconut sugarfor the top
Instructions
Add all ingredients into a high-speed blender and blend until smooth. Pour mixture into ramekin dishes.
Fill the water tank on the bottom of the microwave.
Place ramekins on microwave tray and steam in the microwave on STEAM 2 setting for 25 minutes.
Remove from microwave and allow to cool completely. This will set the mixture and make it firm.
Once cooled, sprinkle 1 tsp of coconut sugar onto the top of each ramekin and place back into the microwave on GRILL 1 for 7 minutes. Makes 4-6 portions depending on the size of ramekins used.
