Vegan Crème Brulee

The traditional crème brulee has been reimagined into a tasty vegan treat for everyone to enjoy! Steamed and grilled in the Panasonic NN-DS59N Combination Steam Microwave.

Ingredients

  • 1 cup raw cashews soaked for 15 minutes in boiling water
  • 1/4 cup arrowroot powder or corn flour
  • 2 cups soy milk
  • Juice of 1 lemon
  • 1/2 cup coconut sugar
  • 4 TBSP agar powder
  • 1 tsp vanilla extract
  • pinch salt
  • 1/2 cup water
  • 4 -6 tsp coconut sugar for the top

Instructions

  • Add all ingredients into a high-speed blender and blend until smooth. Pour mixture into ramekin dishes.
  • Fill the water tank on the bottom of the microwave.
  • Place ramekins on microwave tray and steam in the microwave on STEAM 2 setting for 25 minutes.
  • Remove from microwave and allow to cool completely. This will set the mixture and make it firm.
  • Once cooled, sprinkle 1 tsp of coconut sugar onto the top of each ramekin and place back into the microwave on GRILL 1 for 7 minutes. Makes 4-6 portions depending on the size of ramekins used.
