Black Bean Sweet Potato Balls

Enjoyed as a crispy appetiser or with a main, these air-fry style black bean sweet potato balls are a healthy delight packed with flavour. Microwaved and grilled in the Panasonic NN-DS59N Combination Steam Microwave.

Ingredients

  • 2 small-medium sweet potatoes
  • 1 brown onion
  • 1/2 tsp salt
  • 2 tsp taco seasoning or more to taste
  • 1 flax egg (1 TBSP ground flax seeds mixed with 3 TBSP water)
  • 1 400g can black beans drained and rinsed
  • 1 cup spinach
  • 6 tbsp bread crumbs use gluten-free if necessary

Instructions

  • Pierce sweet potatoes with a fork all over. Place in the microwave and microwave on the MICROPOWER setting for 20 minutes.
  • In the meantime, add all remaining ingredients to a food processor.
  • Once the sweet potatoes are cooked, slice lengthways and scoop out the flesh and add to the food processor.
  • Process until a tacky mixture forms.
  • Roll into balls and place on the microwave grill tray and Grill on the GRILL 2 setting for 20- 25 minutes. This gives an air fryer-style cooking result.
  • Serve with guacamole and salsa.
