Soak dried shiitake mushrooms in hot water while you prep other ingredients.
Marinate minced beef with gochujang, soy sauce and honey.
Chop carrots, pak choy and shiitake mushrooms.
Wash rice and add vegetable stock (or shiitake mushroom water).
Put the carrots, pak choy and shiitake mushrooms on top of the rice and the beef on top of the veggies.
Cook rice as usual (white rice setting).
10 minutes before cooking is complete, add a handful of bean sprouts and toss it with the beef.
When cooking is complete, mix the rice throughly and serve with green onions and sesame seeds.
