Korean Beef Bibimbap

Ingredients

  • 1.5 cups Rice
  • 2 cups Vegetable stock or shiitake mushroom water
  • 5 Shiitake mushrooms
  • 2 Medium carrots
  • 1 Big pak choy or 1 cup of greens like spinach
  • 1 cup Bean sprouts
  • 340 g Minced beef
  • 4 tbsp Gochujang
  • 4 tbsp Soy sauce
  • 1 tbsp Honey
  • 1 Green onion
  • Sesame seeds

Instructions

  • Soak dried shiitake mushrooms in hot water while you prep other ingredients.
  • Marinate minced beef with gochujang, soy sauce and honey.
  • Chop carrots, pak choy and shiitake mushrooms.
  • Wash rice and add vegetable stock (or shiitake mushroom water).
  • Put the carrots, pak choy and shiitake mushrooms on top of the rice and the beef on top of the veggies.
  • Cook rice as usual (white rice setting).
  • 10 minutes before cooking is complete, add a handful of bean sprouts and toss it with the beef.
  • When cooking is complete, mix the rice throughly and serve with green onions and sesame seeds.
