Hearty Vegetarian Casserole
With the cooler weather on the way, easy casseroles and stews make a warm and comforting addition to the dinner menu. This hearty casserole brings together a mix of nutritious vegetables to create a simple one-dish wonder in your microwave.

  1. 200 g mushrooms, sliced
  2. 1 eggplant, chopped
  3. 200 g zucchini, sliced
  4. 1 capsicum, sliced
  5. 1 onion, sliced
  6. 400 g can tomatoes
  7. ½ cup tomato paste
  8. 1 tablespoon chopped basil
  9. 1 clove garlic, minced
  10. Fresh herbs to garnish
  1. Place mushrooms, eggplant, zucchini, capsicum and onion in a 3-litre casserole dish.
  2. Cover and cook on P7 for 10 minutes.
  3. Add tomatoes, tomato purée, herbs and garlic. Re-cover and cook on P10 for 8 to 10 minutes.
  4. Add remaining ingredients.
  5. Cover with plastic wrap and cook on P10 for 8 to 10 minutes.
  6. Garnish with fresh herbs and serve.
