Minestrone Soup
Serves 6
Loaded with fresh seasonal vegetables, this classic minestrone soup is made even easier with our NN-CD58JS Convection Microwave. It's warm, delicious and comforting which is perfect for your everyday meal or even a starter dish for your beloved guest.   1. 30ml Olive Oil
  2. 1 Carrot, finely diced
  3. 1 Celery Stick, finely diced
  4. 1 Red Onion, finely diced
  5. 1 Garlic clove, crushed
  6. 400gr Canned Chopped Tomatoes
  7. 15ml Tomato Puree
  8. 900ml Vegetable Stock
  9. 100gr Green Cabbage, finely shredded
  10. 6 Basil Leaves, roughly chopped
  11. 50gr Small Pasta Shapes
  12. 400gr Canned Baked Beans
  13. Salt and Pepper
  14. Parmesan
  1. Place the olive oil, carrot, celery, onion and garlic into large casserole dish, cover with a lid and cook on 1000 W for 5 minutes
  2. Add the tomatoes, tomato puree and stock and cook on 1000 W for 5 minutes then 300 W for 15 minutes.
  3. Stir in the cabbage, basil, pasta, baked beans and seasoning and cook on 300 W for 35 minutes. Serve sprinkled with Parmesan
