Chorizo and Chickpea Soup

Satisfy your hunger with this exotic hearty Chorizo and Chickpea Soup recipe. This delightful dish is popular in autumn and winter as an entree or soul-soothing snack. All you need is a Panasonic Microwave and a blender!
Servings: 4 people


  • Dish: large bowl


  • 100 g finely sliced spicy chorizo
  • 1 red onion finely chopped
  • 175 g red split lentils
  • 750 ml vegetable stock
  • 400 g can chopped tomatoes
  • 200 g can chickpeas
  • 4 tbsps yoghurt
  • Coriander leaves to garnish


  • Place the chorizo, red onion in a large bowl and cook on HIGH MICROWAVE for 2 mins
  • Stir in the lentils, stock and tomatoes and cook on HIGH MICROWAVE for 15 mins or until the lentils are soft. Stir in the chickpeas and leave to cool slightly.
  • Stir in the yoghurt.
  • Place cooled soup in liquidiser and puree until smooth. Season to taste. Cover and cook on MEDIUM MICROWAVE for 2 mins to warm through.
